Choila – A typical Newari dish from Nepal

How to make Choila?

Ingredients

The ingredients needed to make Choila will vary depending on the recipe, but
generally, you will need the following:

  • Meat (Buffalo or Chicken)
  • Ginger-garlic paste
  • Cumin powder
  • Turmeric powder
  • Chili powder
  • Mustard oil
  • Salt
  • Green garlic leaves 
  • Yogurt (optional)
  • Lemon Juice (optional)

For the grilling: 

  • Grill the meat on a charcoal grill or gas grill until cooked through.
  • After it is well cooked, chop it into small pieces. 

For the marinade: 

  • Mix ginger-garlic paste, cumin powder, turmeric powder, chili powder, mustard oil, salt, chopped garlic leaves, yogurt, and lemon juice in a bowl. 
  • Add the grilled meat (Buffalo or Chicken) to the marinade and coat well. 
  • Marinate the meat and leave for an hour.
  • Serve it with Chiura, Bhatmas, and Achar.

Note: You can adjust the quantity of the spices and other ingredients according to your taste preferences. It’s also possible to add some other ingredients, like Sesame oil, coriander powder, cilantro, etc. Some people also add chopped onions and tomatoes to the marinade to enhance the flavor.
